Craziness

This morning was just nuts. I have no idea why, but I was rushing around and could barely keep anything straight. I finally left the house for work with (hopefully) everything in tow and in one piece.

I did have time for a great breakfast, though, no worries. I started with this:

Which I crumbled and used to top some Greek yogurt. It was so good! I love almond or peanut butter in my yogurt, so this was a great chewy way to get it in there. Plus filling thanks to the protein in the Greek yogurt (10 g for half a cup) and the healthy fat in the Larabar.

Lunch is a repeat of last night’s dinner: salmon salad with Greek yogurt, mushrooms, zucchini, dried cranberries, and red onion. Except today I’m having it with a sandwich thin.009 - Copy (16)

Thanks to the aforementioned craziness, I couldn’t get a pic of the rest of my lunch and packed snacks. I’m going to be gone until I get back from my Team in Training run around 8:30 or 9 tonight, so I had to pack a lot. I’m bringing an Adora disk, a serving of Kashi TLC crackers, a string cheese, several strawberries, and a serving of Kashi Heart to Heart. Hopefully all that will get me through a hot workout later! I’m already drinking lots of water in preparation.

Coming up tonight: a run, a tasty/inventive dinner, and a very popular dessert. :) Have a great day!

Back in the Routine

I was up and back in the routine quickly this morning with an easy 40-minute run. And I mean quickly since I needed to be at work early which means an early alarm. I guess I was in a different place on my route when the sun came up because I saw one of the best sunrises ever! Wish I’d brought my camera.

Early morning also leads to a quick breakfast and quick lunch.

Kashi Heart to Heart with a banana, strawberries, flax, skim, and a couple pieces from a “Fruit ‘n Nut” pack I picked up at Starbucks before my trip.

And the lunch lineup, which features a new product! We found these Orowheat Sandwich Thins (I think they’re called Arnold’s other places around the country) at Costco, so this will be my first time trying one. They’re whole wheat, 100 calories with 5g protein and 5g fiber. Hopefully they’re tasty! I’m also bringing an apple, almond butter (hmm…wonder what I’m going to make), a cheese stick, and Adora.

Forgetful

I was sitting here eating my lunch when I realized…I forgot to post it this morning! I took pictures and everything when I packed it earlier and just forgot to include it in my morning post.

Main course was Greek yogurt (the unidentifiable substance in the Tupperware on the right) with strawberries, blueberries (defrosted ones from when we picked our own this summer), and Kashi Heart to Heart. I can tell you already it was tasty, especially when I added some cocoa-dusted almonds.

I also packed some Kashi crackers, a string cheese, a clementine, and an Adora disk to round out lunch and an afternoon snack.

Trust Me!

There is no better way to start off a Monday than with a workout. (I am partially writing this to keep reminding myself of it, just so you know.) It was dark when my alarm went off this morning, but by the time I was up and dressed, the sun had come up enough for me to venture out there. With the sun and work, I don’t have too big of a time window in which to run on weekday mornings, but I did close to four miles this morning and that is perfect for my Monday run.

Because of the time crunch, breakfast was simple. A full serving of PB granola (just about the end of it!) with some skim milk and half a sliced banana.

Last night I did work out a tentative meal plan for the week. I tried to mix and match all the meals considering my schedule, my workouts, how much time I would have, and what groceries I’d have on hand. I strived for balance in terms of food groups as well as creativity, so we’ll see how it turns out! Since I knew time this morning would be tight, lunch was easy to throw together.

I have a few whole wheat bagels in the freezer that I need to use up, so I’m taking one for lunch today topped with some freshly made…

…almond butter! I was out, so I whipped some up this morning. (Easy way to time it: turn on the oven, put the almonds in, then jump in the shower and take the nuts out when you’re done. Worked for me today!)

I have tons of fruit on hand right now, so I packed some cherries, a cheese stick, some almonds, and the other half of my banana from this morning to round out lunch and for my afternoon snack.

Back on the Yoga Train

Just as Whit mentioned in a comment the other day, I hopped back on the yoga train this morning. :) I turned off my alarm, rolled out of bed onto the floor, and started in on Gentle Hatha #1. This is the Yoga Download class that I started with, and it’s what I would recommend to anyone wanting to try yoga. It’s only 20 minutes, and it’s free!

Next of course was breakfast. Last night I was able to pick up this:

This is one of my favorite granolas, and I haven’t had it in…three months probably?! Too long. I combined a full serving (which is substantial—260 cals.) with ~1/2 cup of skim milk and a banana.

Mmm…this granola is so peanut buttery. With the banana and the milk, it’s perfect.

I also packed up lunch. I cooked up onions, mushrooms, green bell peppers, and summer squash with one scrambled egg, and seasoned everything with salt and paprika. I stuffed it in a wrap, which I then packed in foil (the only way to transport a wrap), and also brought carrot sticks with hummus, a cheese stick, an Adora disk, and my last three strawberries. I haven’t eaten lunch yet, but I’m looking forward to it!

Abundant Amounts of Awesomeness

6) Awesome dinner: I am kicking myself that I didn’t bring my camera! At a salad bar, I compiled a delicious salad with greens, mushrooms, carrots, edamame, grapes, strawberries, roasted peanuts, dried cranberries, black beans, jicama…and probably some other stuff! Plus, the best news of all: it cost $2.87. :)

A Good Decision

I was planning to get up this morning and run before work. For that first minute or two when I woke up, though, I sure wasn’t feeling it. But I took the time to go through in my head what it would feel like to get my run in early versus having to come home from work and then doing it. So I made myself get out of bed and go! Plus, isn’t that a great way to start off a healthy week? That’s what I need to tell myself when that alarm clock goes off a little earlier than I’d like. The run went well, though, besides that damn humidity. And it feels so good to be done.

I made another oatmeal pancake, this time with 1/2 cup oats, ~1/4 cup Eggbeaters (I needed to use them up), 1/2 tsp. baking powder, and one banana (half mashed in the batter and half sliced on top). I usually make the pancake with egg whites, but like I said I needed to use Eggbeaters. The difference wasn’t huge, but I think I prefer using the egg whites because you don’t have that really “eggy” taste, if that makes sense.

Other toppings were a sprinkle of flax and a drizzle of peanut butter. Yes, you heard read that correctly. I have leftover peanut butter from the cookies I made yesterday, so I used a little bit this morning. Sure was good! Though I will remain forever loyal to my beloved almond butter, which I used for the lunch that I packed.

Which is here! Sorry the picture turned out a little blurry. :( I packed an Ezekiel English muffin with a tablespoon of AB, baby carrots, and an Adora disc. Then for a snack I have grapes and string cheese.

Coming up later: probably some strength training, a fun dinner, and a fun dessert! But first, another pancake picture because they’re so pretty. :)
