Treat Meal!

Well, not really, but burgers and fries always feels like a treat meal to me. :)

My normal bean burger recipe (1/3 cup of black beans mashed with diced mushrooms, ancho chili pepper, and one tbsp. of WW flour) on a mini whole wheat bun with spinach (beneath the burger) and “guacamole” (just mashed avocado with a little Greek yogurt).

And we have completely solidified the perfect sweet potato recipe! Take one sweet potato and (with the skin on) slice it into skinny fries, as shown. Place in a single layer on a sprayed cookie sheet, and bake for 15-20 minutes in a 400* oven, flipping once. Take ‘em out and sprinkle with salt and ancho chili pepper. So AWESOME! A little soft with great flavor and a bit of crunch.

I actually had a really productive day today. I got lots of things crossed off the to-do list, including buying a new fridge for my dorm room this year! It will certainly get tons of use, I can promise you that. I’m dealing with a couple major decisions right now, so I’m off to do more research and make pro-con lists (plus probably watch The Next Food Network Star…don’t judge). Have a great Sunday night!

That would stand for black bean burgers, of course. Dinner tonight was amazing. Plain and simple.

For two servings, I combined 2/3 cup of black beans with 2 tbsp. whole wheat flour, paprika and a few chopped mushrooms. While those burgers cooked in a skillet (~4 minutes per side), the sweet potato fries were in the oven. Cooked thin, they took about 20 minutes at 400* (stirred once) and were sprinkled with paprika and salt. I had my burger on an Ezekiel English muffin with a couple more sautéed mushrooms, chopped cherry tomatoes, and “guacamole”: avocado mashed with Greek yogurt. These black bean burgers are so good.

And I also did some Shredding this afternoon. :) To bed early tonight for my early run tomorrow!

Perfect for Summer

When the days get longer and air gets hotter, the barbecue grills come out, right? Grilling is a tasty (and healthy!) way to prepare food, and it just seems so appropriate for summer. It’s even better if you can do it outside with the family and keep your kitchen cooler by leaving the stove and oven off.

So in spirit of the season, I wanted to share with you a good feature about the quintessential grilled summer food…burgers! Real Simple is one of my favorite magazines (my mom and I have been subscribers for years), and here they have 12 great ideas about burger toppings. People so often focus on making the perfect burger and then completely neglect what goes on top of it!

I love these unique combos that are good on any type of burger or even on something completely different if you’d like. I like that they include recipes for all different kinds of burgers—including veggie, turkey, beef, and salmon—which is nice for someone like me who would usually prefer to have something else than a beef burger. I am definitely going to make the veggie burger with pineapple-jalapeno salsa! Check the feature out here and get some great ideas. Thanks for the inspiration, Real Simple!

Burger and Chips

But…not exactly your normal burger and chips. On the menu today for lunch was a black bean burger and sweet potato chips.

I started with the sweet potatoes. This was one sweet potato, peeled and sliced into rounds. I baked them for about 30 minutes in a 425* oven on a baking sheet with cooking spray. I forgot to sprinkle a little salt on them, though, which was a bummer. Still good, though!

For the burger, I mixed 1/3 cup of black beans (from a can, the beans were drained and rinsed) with 1 tablespoon of whole wheat flour and seasoned simply with cinnamon, ground ancho chili pepper, and salt. I mashed up that mixture, formed a patty, and cooked it in a skillet (with cooking spray!) for about 5 minutes on each side, until it was nicely browned. Then it went on two slices of whole wheat bread for a delicious lunch! The burger had a great flavor to it (the spice level wasn’t overwhelming or bland), it wasn’t mushy at all, and it was so easy to make.
