M-Day Brunch

Since I broke out this meal for brunch on our last M-Day in May (Mothers’ Day) I figured it was only appropriate for Memorial Day. And what a nice brunch it was!

After a nice little run this morning, I whipped up some pancakes using my very favorite recipe here. (The only changes I make are two eggs and whole wheat pastry flour.) This recipe is delicious and really, really easy to make. The mashed banana in the batter gives the pancakes a lovely, soft texture and sweetness.

I made three big pancakes for two people, so we each got one and a half. I topped them with blueberries, strawberries, and ground flax. Yum! :)

I did end up doing some yoga last night, Detox Yoga #1 from Yoga Download. I did it right before bed, and it was a fun sequence: lots of interesting twists.
